Muffin Preparation

    Prepare the Muffin Pan

    Preheat the oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.

    Make the Topping

    In a small bowl, mix the brown sugar with a little melted butter. Spoon this mixture evenly into the bottom of each muffin cup. Place a slice of pineapple and a cherry on top of the brown sugar mixture.

    Mix the Dry Ingredients

    In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.

    Combine Wet Ingredients

    In another bowl, mix the milk, vegetable oil, and egg until well combined.

    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

    Fill the Muffin Cups

    Spoon the muffin batter over the pineapple and cherry topping in each muffin cup, filling them about 2/3 full.
