    Prepare the roast

    Season the beef chuck roast with salt and black pepper on all sides.

    Brown the roast

    In a large pot or Dutch oven, heat some oil over medium-high heat. Brown the roast on all sides for about 5-7 minutes.

    Sauté the vegetables

    Remove the roast and set aside. In the same pot, add onions, carrots, celery, and garlic. Sauté for about 5 minutes until they start to soften.

    Deglaze the pot

    Pour in the red wine and scrape the bottom of the pot to deglaze. Let it simmer for a couple of minutes.

    Combine ingredients

    Return the roast to the pot. Add beef broth, thyme, bay leaves, and additional salt and pepper to taste.

    Braise the roast

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 3-4 hours or until the roast is tender.

    Prepare mashed potatoes

    While the roast is cooking, prepare mashed potatoes separately. Boil peeled potatoes until tender, then mash with butter, milk, salt, and pepper.

    Serve

    Once the roast is done, remove it from the pot and let it rest for a few minutes. Slice and serve over a bed of mashed potatoes with the vegetables and sauce.
