Prepare the Batter
In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined. In another bowl, mix the milk, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chocolate chips.

Cook the Griddlecakes
Preheat a griddle or large skillet over medium heat. Lightly grease with butter or cooking spray. Pour 1/4 cup of batter onto the griddle for each griddlecake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until cooked through. Repeat with remaining batter.

Make the Chocolate Ganache
In a small saucepan, heat 1/2 cup of heavy cream over medium heat until it just begins to simmer. Remove from heat and add 1 cup of chopped chocolate or chocolate chips. Let it sit for a minute, then stir until smooth and glossy.

Serve
Stack the griddlecakes on a plate, drizzle with warm chocolate ganache, and dust with powdered sugar. Top with a fresh strawberry for garnish.
