Prepare the Mornay Sauce
In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for 2 minutes, stirring constantly. Gradually whisk in the milk and cook until the sauce thickens. Remove from heat and stir in half of the grated Parmesan cheese, salt, pepper, and nutmeg. Set aside.

Assemble the Sandwiches
Take 4 slices of sourdough bread and layer each with a slice of smoked ham and a slice of Swiss cheese. Top with the remaining 4 slices of bread to form sandwiches.

Add the Mornay Sauce
Preheat your broiler. Place the toasted sandwiches on a baking sheet. Spoon the prepared mornay sauce over each sandwich and sprinkle with the remaining grated Parmesan cheese.

Broil and Serve
Broil the sandwiches for 2-3 minutes or until the cheese is bubbly and golden. Remove from the oven, slice, and serve warm.
