Prepare Roasted Potatoes
Preheat the oven to 400°F (200°C). Cut the potatoes into cubes, toss with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes until golden brown.

Cook the Eggs
In a bowl, whisk the eggs with a pinch of salt and pepper. Heat a non-stick skillet over medium heat, add a little olive oil, and scramble the eggs until cooked through. Set aside.

Prepare the Filling
In the same skillet, sauté chopped onion and diced jalapeño until softened. Add the braised beef and cook until heated through. Mix in chopped cilantro and diced tomatoes.

Assemble the Burritos
Warm the flour tortillas in a dry skillet or microwave. Layer each tortilla with the beef mixture, scrambled eggs, sliced avocado, Monterey Jack, and cheddar cheese. Drizzle with chipotle sauce.

Roll the Burritos
Fold in the sides of the tortilla and roll tightly from the bottom up. Repeat for all tortillas.

Serve the burritos with the roasted potatoes on the side. Enjoy!
