    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash and dice the potatoes into cubes. Toss them in olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes until golden and tender.

    Cook the Meats

    In a skillet over medium heat, cook the hickory-smoked bacon until crispy. Remove and drain on paper towels. In the same skillet, cook the pork and andouille sausages until browned, then chop them into bite-sized pieces. Set aside.

    Prepare the Omelet

    In a bowl, whisk the eggs with a little salt and pepper. Pour the eggs into the skillet and cook over medium-low heat. As the edges set, gently lift them to allow uncooked eggs to flow underneath. Once the eggs are mostly set, add the cooked bacon, ham, sausage, diced tomato, and cheddar cheese on one half of the omelet.

    Finish the Omelet

    Carefully fold the other half of the omelet over the filling. Cook for another minute until the cheese is melted and the omelet is cooked through. Slide onto a plate.

    Serve the omelet hot alongside the roasted potatoes.
