Prepare the apples
Preheat your oven to 350°F (175°C). In a large bowl, toss the sliced apples with granulated sugar, cinnamon, and lemon juice. Set aside to let the flavors meld.

Make the streusel topping
In another bowl, combine the flour, oats, brown sugar, and melted butter. Mix until crumbly.

Assemble the pie
Place the flaky pastry pie crust in a pie dish. Pour the apple mixture into the crust, spreading it evenly. Sprinkle the streusel topping generously over the apples.

Bake in the preheated oven for 45-50 minutes, or until the apples are tender and the topping is golden brown.

Remove from the oven and let cool slightly. Serve warm with scoops of vanilla ice cream and drizzle with caramel sauce.
