Method

Marinate and Cook Chicken

    Marinate the Chicken

    In a bowl, mix together the olive oil, lemon juice, minced garlic, cumin, coriander, paprika, cinnamon, salt, and black pepper. Add the chicken thighs and coat well. Marinate for at least 1 hour or overnight in the refrigerator.

    Cook the Chicken

    Preheat a grill or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-7 minutes on each side or until fully cooked. Let it rest for a few minutes before slicing.

Prepare the Grains

    Cook Quinoa and Brown Rice

    Rinse the quinoa under cold water. In a pot, combine 1 cup of quinoa with 2 cups of water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. For brown rice, combine 1 cup of rice with 2 cups of water and cook according to package instructions.

Assemble the Bowl

    Prepare the Salad

    Chop the iceberg lettuce, tomatoes, cucumber, and radishes. Toss with the fattoush dressing and add chopped parsley and mint leaves.

    Assemble the Bowl

    In a deep bowl, layer the quinoa and brown rice at the bottom. Top with the sliced chicken shawarma, dressed salad, pickles, pickled turnips, and a generous scoop of hummus. Drizzle with garlic sauce before serving.
