Method

Marinating the Meats

  1. 1

    Marinate Chicken

In a bowl, mix olive oil, minced garlic, cumin, coriander, paprika, salt, pepper, lemon juice, and yogurt. Add the chicken breast cut into strips, ensuring it's well coated. Marinate for at least 1 hour (or overnight for best results).

  2. 2

    Prepare Donair Meat

In a separate bowl, combine ground beef or lamb with salt, pepper, and additional spices as desired. Form into a loaf shape and refrigerate for about 30 minutes.

Cooking the Meats

  1. 3

    Grill Chicken and Donair

Preheat a grill to medium-high heat. Grill the marinated chicken strips for about 5-7 minutes on each side until fully cooked. Cook the donair meat on a grill pan or slice thinly and cook until browned.

  2. 4

    Cook Souvlaki Skewers

If you have chicken souvlaki skewers, grill these for about 10-12 minutes, turning occasionally until cooked through.

Preparing Salad and Dips

  1. 5

    Make Salad

In a large bowl, combine mixed greens, diced tomato, cucumber, red onion, and feta cheese. Dress with olive oil, red wine vinegar, salt, and pepper to taste.

  2. 6

    Prepare Dips

Serve hummus in a bowl alongside tahini sauce and spicy garlic sauce in separate bowls for dipping.

Assembling the Plate

  1. 7

    Plate the Mixed Grill

On a large serving platter, arrange the grilled chicken, donair meat, and souvlaki skewers. Add pita bread on the side, and serve with salad and dips.
