Preparation of Filling

Cook the Rice
In a saucepan, bring 1 cup of water to a boil. Add the rice, cover, and reduce the heat to low. Cook for about 15 minutes until the rice is tender and the water is absorbed. Let it cool.

Prepare the Filling
In a large bowl, combine the cooked rice, ground meat, chopped onion, parsley, dill, salt, black pepper, and olive oil. Mix well.

Prepare Grape Leaves
Rinse the grape leaves under cold water and drain. Lay them flat on a clean surface, vein side up.

Fill and Roll
Place about 1 tablespoon of the filling at the base of each grape leaf. Fold the sides over the filling and roll tightly from the base to the tip. Repeat until all filling is used.
Cooking

Layer and Cook
In a large pot, layer any leftover grape leaves at the bottom. Arrange the rolled grape leaves seam side down in a single layer. Add lemon juice and water, covering the rolls. Cover the pot and simmer on low heat for about 45 minutes.

Once cooked, remove from heat and let cool slightly. Serve warm or at room temperature, drizzled with olive oil or lemon juice if desired.
