Baklava Preparation

1. Prepare the Nut Mixture

In a bowl, combine chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Mix well and set aside.

2. Prepare the Phyllo Dough

Preheat the oven to 350°F (175°C). Melt the unsalted butter in a saucepan. Lay out the phyllo dough and cover it with a damp cloth to prevent drying out.

3. Assemble the Baklava

In a greased 9x13 inch baking dish, place one sheet of phyllo dough, brushing melted butter on top. Repeat this process for 8 sheets. Sprinkle a layer of the nut mixture over the phyllo. Continue layering phyllo and nut mixture until all ingredients are used, finishing with 8 layers of buttered phyllo on top.

4. Cut and Bake

Using a sharp knife, cut the baklava into diamond or square shapes. Bake in the preheated oven for about 50 minutes, or until golden brown.

5. Prepare the Syrup

While the baklava is baking, combine water, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and let simmer for about 10 minutes.

6. Finish the Baklava

Once the baklava is done baking, remove it from the oven and immediately pour the syrup over it. Allow it to soak for several hours or overnight before serving.
