    In a bowl, combine the achiote paste, minced garlic, cumin powder, salt, black pepper, and olive oil. Mix well to form a marinade. Add the lamb shoulder to the marinade, ensuring it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Preheat your oven to 300°F (150°C). Place the marinated lamb in a roasting pan, cover with foil, and roast for about 3 hours or until tender. Remove from the oven and let rest for 15 minutes before shredding the meat.

    While the lamb is resting, warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side until pliable.

    To serve, place a generous amount of shredded lamb on each tortilla. Top with shredded lettuce and diced tomatoes.
