Remove stems and seeds from the dried ancho and guajillo chiles. Soak them in hot water for about 15-20 minutes until soft.

In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.
