Prepare the Chicken
In a large pot, place the whole chicken and cover it with water. Bring to a boil and then reduce to a simmer. Cook for about 30 minutes, skimming any foam that rises to the surface.

Add Vegetables
Add chopped carrots, celery, onion, and minced garlic to the pot. Stir well and add the chicken broth, bay leaves, salt, and black pepper.

Simmer the Soup
Cover the pot and let the soup simmer for an additional 30-40 minutes, or until the chicken is cooked through and the vegetables are tender.

Shred the Chicken
Remove the chicken from the pot, let it cool slightly, and then shred the meat off the bones. Discard the bones and return the shredded chicken to the soup.

Stir in the fresh cilantro and adjust the seasoning with additional salt and pepper if needed. Serve hot.
