Prepare the Dough
In a mixing bowl, combine the corn masa harina and salt. Gradually add the water and mix until a soft dough forms. If the dough is too dry, add a little more water.

Shape the Gorditas
Divide the dough into equal portions (about the size of a golf ball). Flatten each ball into a thick patty about 1/2 inch thick.

Cook the Gorditas
Heat vegetable oil in a skillet over medium heat. Cook each patty for about 4-5 minutes on each side until they are golden brown and cooked through.

Assemble the Gorditas
Top each cooked gordita with refried beans, shredded beef or chicken, lettuce, diced tomatoes, and cheese. Drizzle with sour cream and sprinkle with optional grated cheese.

Serve the gorditas warm and enjoy!
