Prepare the Filling
In a bowl, mix the refried beans with salt and pepper to taste. Set aside.

Roll the Tortillas
Take one corn tortilla and spread a couple of tablespoons of the bean mixture in the center. Roll the tortilla tightly and secure with a toothpick if necessary. Repeat with the second tortilla.

Heat the Oil
In a skillet, heat the oil over medium heat until hot but not smoking.

Fry the Flautas
Carefully place the rolled tortillas in the hot oil. Fry for about 3-4 minutes on each side or until golden brown and crispy.

Drain and Assemble
Remove the flautas from the oil and drain on paper towels. Top with shredded lettuce, diced tomatoes, a drizzle of sour cream, and crumbled cheese.
