Prepare the Tortillas
In a skillet, heat the vegetable oil over medium heat. Lightly fry each corn tortilla for about 10-15 seconds on each side until they are pliable. Remove and drain on paper towels.

Assemble the Enchiladas
Dip each fried tortilla in the mole sauce, then fill with a portion of shredded chicken and a sprinkle of shredded cheese. Roll up the tortilla tightly and place seam side down in a baking dish.

Bake
Once all the enchiladas are assembled, pour any remaining mole sauce over the top. Sprinkle additional shredded cheese on top. Bake in a preheated oven at 350°F (175°C) for about 20 minutes or until the cheese is melted and bubbly.

Serve
Remove from the oven and let cool slightly. Serve topped with sour cream and shredded lettuce.
