Preparation

    Roast the Peppers

    Preheat the oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast for 20-25 minutes, turning occasionally until the skin is blistered and charred.

    Prepare the Filling

    Once the peppers are roasted, place them in a plastic bag or cover them with a towel for about 10 minutes. This will make peeling easier. After they've cooled, carefully peel the skin off, make a slit on one side of each pepper, and remove the seeds. Stuff each pepper with cheese.

    Make the Batter

    In a bowl, separate the egg whites and yolks. Beat the egg whites until stiff peaks form. In another bowl, beat the yolks until light and fluffy, then fold them gently into the beaten egg whites. Gradually add flour and mix until combined.

    Fry the Peppers

    Heat oil in a frying pan over medium heat. Dip each stuffed pepper into the egg batter, allowing excess to drip off, and carefully place in the hot oil. Fry until golden brown on all sides, about 2-3 minutes per side. Remove and drain on paper towels.

    Prepare the Sauce

    In a saucepan, sauté chopped onions and minced garlic until soft. Add tomato sauce, cumin, salt, and pepper. Let simmer for about 10 minutes.

    Serve

    Place the fried chiles rellenos in a serving dish and pour the tomato sauce over them. Garnish with sour cream and serve immediately.
