    Prepare the Filling

    In a large skillet, heat olive oil over medium heat. Add the sliced leeks and sauté until soft, about 5 minutes. Add the chopped spinach and cook until wilted, around 3-4 minutes. Remove from heat and let it cool slightly.

    Mix the Filling

    In a mixing bowl, combine the cooled spinach and leek mixture with crumbled feta cheese, salt, pepper, and dill. Mix well and set aside.

    Prepare the Phyllo

    Preheat the oven to 180°C (350°F). Lay out a sheet of phyllo pastry on a clean surface, brush lightly with olive oil, and layer another sheet on top. Repeat this process with 4 sheets.

    Fill and Fold

    Place a portion of the filling along one edge of the phyllo sheets. Fold the sides over the filling and roll it up tightly to form a log. Place the rolled spanakopita on a baking sheet lined with parchment paper. Brush the top with the beaten egg.

    Bake

    Repeat the process until all filling is used. Bake in the preheated oven for 25-30 minutes, or until golden brown and crisp.

    Let the spanakopita cool slightly before cutting into pieces. Serve warm with tzatziki on the side.
