Preparation

    Prepare the Charred Leek Soubise

    In a saucepan, melt butter over medium heat, add chopped leeks, and sauté until soft and slightly caramelized. Add heavy cream, salt, and pepper, and cook until thickened. Blend until smooth and keep warm.

    Make Fondant Potatoes

    Peel and cut potatoes into cylinders. In a skillet, melt butter and sear the potatoes on all sides until golden. Add chicken stock, thyme, salt, and pepper. Cover and simmer until tender, about 20 minutes.

    Prepare Shaved Asparagus

    Using a vegetable peeler, shave asparagus into ribbons. Toss with olive oil, salt, and pepper, and set aside.

    Roast Tomatoes

    Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper, and roast for 15-20 minutes until blistered.

    Make Cava Beurre Blanc

    In a saucepan, combine cava and shallots. Reduce until almost dry. Add cream and whisk in butter gradually, adding salt and pepper to taste. Keep warm.

Cooking the Salmon

    Cook the King Salmon

    Season the salmon fillets with salt and pepper. Heat a skillet over medium-high heat, add a little oil, and sear the salmon skin-side down for 4-5 minutes. Flip and cook for another 2-3 minutes until desired doneness.

Plating

    Assemble the Dish

    On each plate, spread a layer of charred leek soubise, place fondant potatoes, arrange shaved asparagus, and top with salmon. Drizzle with cava beurre blanc and garnish with roasted tomatoes.
