    Prepare the Potatoes

    Preheat the oven to 425°F (220°C). Wash the fingerling potatoes and cut them into halves or quarters, depending on their size. Toss the potatoes in olive oil, salt, paprika, and cayenne pepper until evenly coated.

    Bake the Potatoes

    Spread the potatoes on a baking sheet in a single layer and bake for 25-30 minutes, or until crispy and golden brown, flipping halfway through.

    Make the Brava Sauce

    In a small saucepan over medium heat, combine olive oil, minced garlic, paprika, and cayenne. Cook for 1-2 minutes until fragrant, then remove from heat and stir in salt and lemon juice.

    Prepare Honey-Garlic Aioli

    In a bowl, mix mayonnaise, minced garlic, honey, and lemon juice until smooth. Adjust seasoning with salt to taste.

    In a skillet over medium heat, add a bit of olive oil and crack the eggs into the pan. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.
