    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente.

    Prepare the Guanciale

    While the pasta is cooking, cut the guanciale into small strips. In a large skillet over medium heat, cook the guanciale until it's crispy and golden, about 5-7 minutes.

    Mix the Egg and Cheese

    In a mixing bowl, whisk together the eggs, grated Pecorino Romano, grated Parmesan Reggiano, and a generous amount of black pepper until well combined.

    Combine Ingredients

    Once the pasta is cooked, reserve about 1 cup of the pasta cooking water, then drain the spaghetti. Add the hot spaghetti directly to the skillet with the guanciale, tossing to combine.

    Finish the Dish

    Remove the skillet from heat. Quickly pour the egg and cheese mixture over the pasta, using tongs to toss everything together. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired creaminess.

    Plate the carbonara and finish with additional grated Pecorino Romano, Parmesan, and black pepper to taste.
