1. Prepare the Relish
In a bowl, mix chopped tomatoes and diced onion. Add olive oil, lemon juice, salt, and pepper. Stir well and set aside.
2. Cook the Salmon
Preheat a skillet over medium heat. Season salmon fillets with salt and pepper. Place them skin-side down in the skillet and cook for about 4-5 minutes on each side, or until fully cooked and flaky.
3. Serve
On a plate, serve a portion of steamed rice, top it with a salmon fillet, and spoon the tomato-onion relish over the salmon. Garnish with fresh parsley.
