Prepare the Lamb
Preheat your oven to 180°C (350°F). In a large bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and black pepper. Rub this mixture all over the lamb to coat it evenly.
Roast the Lamb
Place the seasoned lamb in a roasting pan. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare. Let it rest for 15 minutes before slicing.
Cook the Rice
While the lamb is roasting, rinse the rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 4 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed. Fluff with a fork and set aside.
Make the Tomato-Onion Relish
In a bowl, combine 2 diced tomatoes, 1 diced onion, a pinch of salt, and a drizzle of olive oil. Toss well and let it sit for at least 10 minutes to allow the flavors to meld.
Serve
Serve slices of the roasted lamb over a bed of fluffy rice, topped with the tomato-onion relish.
