Method
Prepare Butter Cookie Crumble
- 1
Make the Crumble
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the unsalted butter and granulated sugar. Cream them together until light and fluffy. Gradually add the flour and salt, mixing until a dough forms. Spread the mixture onto a baking sheet and bake for 15-20 minutes, or until golden brown. Once cooled, crumble into small pieces.
Make Berry Sauce
- 2
Prepare the Sauce
In a saucepan over medium heat, combine the mixed wild berries, granulated sugar, and lemon juice. Cook, stirring occasionally, until the berries break down and the mixture thickens, about 10-12 minutes. Remove from heat and allow to cool.
Assemble Layers
- 3
Layer the Dessert
In a serving dish or individual cups, start by adding a layer of butter cookie crumble. Follow with a layer of berry sauce and then a layer of wild berries. Repeat the layers as desired. In a small bowl, whip the heavy cream with powdered sugar until soft peaks form. Top the dessert with whipped cream and a final sprinkle of cookie crumble.
