Prepare the Filling
In a medium bowl, combine the ground pork, chopped shrimp, minced ginger, minced garlic, Sichuan vinegar, soy sauce, sesame oil, cilantro, salt, and pepper. Mix thoroughly until well combined.

Wrap the Dumplings
Take a dumpling wrapper and place a small spoonful of the filling in the center. Moisten the edges with water, fold the wrapper over to create a half-moon shape, and press the edges to seal. Repeat until all filling is used.

Cook the Dumplings
You can choose to steam, boil, or pan-fry the dumplings. For steaming, place them in a steamer basket over boiling water for about 10-12 minutes. For boiling, cook in a pot of boiling water for about 5-7 minutes. For pan-frying, heat a little oil in a skillet, add dumplings, and fry until golden brown on the bottom, then add a bit of water, cover, and steam until cooked through.

Serve the dumplings hot with additional Sichuan vinegar on the side for dipping.
