Prepare the Broth
Reduce heat and simmer for 24 hours, adding water as needed to maintain the liquid level. After 24 hours, strain the broth through a fine mesh sieve, discarding the solids.

Prepare Chashu
Roll pork belly into a log and tie with kitchen twine. In a separate pot, bring equal parts soy sauce, mirin, and water to a boil. Add the rolled pork belly and simmer on low heat for 2 hours. Let cool before slicing.

Cook the Noodles
Cook ramen noodles according to package instructions. Drain and set aside.
