    Prepare the Mushroom Dashi

    In a large pot, add the dried shiitake mushrooms and water. Bring to a boil, then reduce heat and simmer for 30 minutes. Strain the liquid to create a mushroom dashi broth.

    Sauté the King Trumpet Mushrooms

    While the dashi is simmering, slice the king trumpet mushrooms and sauté them in sesame oil over medium heat until golden brown. Set aside.

    Prepare the Shiitake Salad

    Finely chop the remaining soaked shiitake mushrooms and mix them with thinly sliced green onions, minced garlic, and grated ginger. Add soy sauce and mix well.

    Cook the Ramen Noodles

    In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.

    Assemble the Ramen Bowl

    In a bowl, add the cooked ramen noodles, pour the mushroom dashi over them, and top with sautéed king trumpet mushrooms, shiitake salad, and shio kombu.

    Slice the avocado and tofu, and place them on top of the ramen. Garnish with additional green onions if desired.
