    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, dashi stock, soy sauce, mirin, sugar, and salt until well combined.

    Heat the Pan

    Heat a rectangular or square non-stick frying pan over medium-low heat and lightly grease it with oil.

    Cook the First Layer

    Pour a small amount of the egg mixture into the pan, just enough to cover the bottom. Cook until the edges start to set, then gently roll the egg towards one side of the pan.

    Add More Mixture

    Pour more egg mixture into the pan, lifting the rolled egg to let the new mixture flow underneath. Cook until set, then roll again. Repeat until all the mixture is used.

    Shape the Tamago

    Once fully cooked, remove the tamago from the pan and shape it using a bamboo mat or by hand. Let it cool slightly before slicing.

    Serve

    Slice the tamago into even pieces and serve with soy sauce or as part of a sushi platter.
