Prepare the Marinade
In a mixing bowl, combine hoisin sauce, tamarind paste, brown sugar, soy sauce, minced garlic, grated ginger, salt, and pepper. Mix well until the sugar is dissolved.

Marinate the Spareribs
Place the pork spareribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight for best results.

Preheat the Oven
Preheat your oven to 150°C (300°F).

Bake the Ribs
Remove the spareribs from the marinade and place them on a baking sheet lined with aluminum foil. Reserve the marinade for later. Bake the ribs in the preheated oven for about 2.5 to 3 hours, basting with the reserved marinade every 30 minutes.

Finish and Serve
Once the ribs are tender and the meat is pulling away from the bone, remove them from the oven. Sprinkle sesame seeds and sliced scallions on top before serving. Cut into portions and enjoy your sweet & sour spareribs!
