1. Prepare the Broth
In a large pot, combine the chicken thighs and water. Bring to a boil, then reduce to a simmer. Cook for about 1 hour, skimming any foam that forms on the surface.
2. Flavor the Broth
After 1 hour, add soy sauce and black garlic paste to the pot. Continue to simmer for another 30 minutes, allowing the flavors to meld.
3. Cook the Noodles
In a separate pot, bring water to a boil and cook ramen noodles according to package instructions. Drain and set aside.
4. Prepare Toppings
While the broth simmers, prepare the toppings. Soft-boil the eggs by boiling them for 6-7 minutes, then placing them in ice water. Peel and slice in half. Thinly slice the scallions and cut nori sheets into strips.
