Prepare the Filling
In a large mixing bowl, combine the ground pork, minced garlic, shredded carrot, bean sprouts, green onions, and eggs. Mix well until all ingredients are evenly combined.

Form the Rolls
Soak the rice paper wrappers in warm water for about 10-15 seconds until pliable. Lay the wrapper flat on a clean surface. Place a small amount of the pork mixture in the center of the wrapper. Fold the sides over the filling, then roll from the bottom to the top to form a tight roll. Repeat with remaining wrappers and filling.

Cook the Egg Rolls
In a large skillet or frying pan, heat oil over medium heat. Fry the egg rolls until golden brown and cooked through, about 3-4 minutes on each side. Remove and drain on paper towels.

Serve the egg rolls hot with lettuce leaves and fresh mint for wrapping. Accompany with nuoc mam for dipping.
