Prepare the Filling
In a large bowl, combine ground pork, chopped shrimp, Sichuan vinegar, chopped cilantro, minced garlic, grated ginger, salt, and black pepper. Mix until well combined.

Assemble the Dumplings
Take a dumpling wrapper and place a tablespoon of the filling in the center. Wet the edges of the wrapper with water, fold over to create a half-moon shape, and pinch the edges to seal. Repeat with the remaining wrappers and filling.

Cook the Dumplings
You can either steam or boil the dumplings. To steam, place them in a steamer basket lined with parchment paper and steam for about 10-12 minutes. To boil, drop them in boiling water and cook for about 5-7 minutes or until they float.

Serve
Serve the dumplings hot with additional Sichuan vinegar on the side for dipping.
