Prepare the Pork Belly
Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern and rub salt all over it. Place it in a roasting pan.

Cook the Pork Belly
Roast the pork belly in the preheated oven for about 2.5 to 3 hours, or until the skin is crispy and the meat is tender. Baste with hoisin sauce during the last 30 minutes of cooking.

Pickle the Vegetables
In a bowl, combine rice vinegar, sugar, and salt. Stir until dissolved. Add the julienned daikon and carrots to the mixture and let them pickle for at least 30 minutes.

Serve
Slice the pork belly and serve it with the pickled daikon and carrots on the side. Drizzle with Kewpie mayonnaise and additional hoisin sauce if desired.
