Preparation Directions
Prepare the Short Ribs
In a large pot, add the beef short ribs and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour. Drain and set aside.
Make the Broth
In the same pot, add beef broth, fermented bean paste, onion, ginger, star anise, cinnamon stick, fish sauce, and sugar. Bring to a boil.
Add the Ribs
Add the short ribs back into the pot. Reduce heat and let simmer for 1.5 to 2 hours, until the meat is tender.
Cook the Noodles
While the broth is simmering, cook the rice noodles according to package instructions. Drain and set aside.
Serve the Pho
In a bowl, place a portion of cooked noodles, ladle over the broth with short ribs, and garnish with bean sprouts, basil leaves, lime wedges, and sliced jalapeños. Drizzle with marrow oil if using.
