Mochi Preparation

Prepare Sweet Rice Dough
In a large mixing bowl, combine sweet rice flour and sugar. Gradually add water, mixing until smooth.

Steam the Mixture
Transfer the mixture to a heatproof dish and steam for about 25 minutes or until the dough is translucent.

Cool and Knead
Remove the dish from the steamer and let it cool slightly. Dust a clean surface with cornstarch and knead the dough until smooth.

Divide the Dough
Divide the dough into four equal parts. Leave one part plain and mix matcha powder into the second part, red bean paste into the third, and mango puree into the fourth.

Shape the Mochi
Dust your hands and the working surface with cornstarch. Take a small piece of each dough, flatten it, and wrap it around a small ball of the desired filling (red bean paste, strawberry filling, or mango). Seal the edges and shape into a ball.

Chill and Serve
Place the finished mochi on a plate dusted with cornstarch and refrigerate for at least 30 minutes before serving.
