Method
Preparation
- 1
Marinate the Wings
In a large bowl, combine the chicken wings, togarashi spice blend, tamarind paste, soy sauce, honey, minced garlic, salt, and black pepper. Mix well to coat the wings thoroughly. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
- 2
Prepare for Frying
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- 3
Fry the Wings
Remove the wings from the marinade, allowing excess marinade to drip off. Carefully add the wings to the hot oil in batches, frying until golden brown and cooked through, about 8-10 minutes. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.
- 4
Serve
In a small pan, lightly toast the Sichuan peppercorns over medium heat until fragrant, then grind them into a powder. Sprinkle the ground Sichuan peppercorns over the fried wings before serving. Enjoy your Firecracker Wings!
