    Prepare the Squash

    Preheat your oven to 350°F (175°C). Slice the yellow squash into thin rounds and set aside.

    Cook the Onion and Garlic

    In a skillet over medium heat, melt a small amount of butter. Add the chopped onion and minced garlic, sautéing until the onion is translucent.

    Mix Ingredients

    In a large bowl, combine the cooked onion and garlic, yellow squash slices, cream of mushroom soup, sour cream, 1 cup of shredded cheddar cheese, salt, and pepper. Stir until well mixed.

    Transfer to Baking Dish

    Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

    Top with Breadcrumbs

    In a small bowl, mix the breadcrumbs with melted butter. Sprinkle this mixture over the casserole.

    Bake

    Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the casserole is bubbly.

    Add Remaining Cheese

    Remove from oven, sprinkle remaining 1 cup of cheddar cheese on top, and return to oven for an additional 5-10 minutes until cheese is melted.
