Prepare the Roux

In a large pot, heat the olive oil over medium heat. Add flour and stir continuously for about 15-20 minutes until the roux turns a dark brown color.

Cook the Vegetables

Add the diced onion, bell pepper, and celery to the roux. Cook for an additional 5-7 minutes until the vegetables soften.

Add the Sausage and Chicken

Stir in the Andouille sausage and chicken thighs. Cook until the chicken is browned on all sides.

Combine Remaining Ingredients

Add the minced garlic, canned diced tomatoes, chicken broth, bay leaves, Cajun seasoning, salt, and black pepper. Stir to combine.

Simmer the Gumbo

Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes. Add the okra and shrimp, and continue to simmer for another 10-15 minutes until the shrimp is cooked through.

Serve

Remove the bay leaves, serve the gumbo hot over cooked rice, and garnish with chopped green onions.
