Cooking Instructions
Prepare the Shrimp
In a bowl, toss the shrimp with cornstarch until evenly coated. Set aside.
Stir-fry the Vegetables
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced onion and bell pepper, and stir-fry for about 3-4 minutes until they start to soften.
Cook the Shrimp
Push the vegetables to one side of the skillet and add another tablespoon of vegetable oil. Add the minced garlic and ginger, and cook for 30 seconds until fragrant. Then, add the shrimp and stir-fry for 3-4 minutes until they turn pink and are cooked through.
Add Sauces and Cashews
Mix the shrimp and vegetables together, then add soy sauce and oyster sauce. Stir in the roasted cashews and green onions, cooking for an additional 1-2 minutes.
Serve
Serve the cashew shrimp hot over steamed rice or egg fried rice, alongside egg rolls.
