Prepare the Filling
In a pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the rice, stirring for a few minutes, then add the parsley, mint, lemon juice, salt, and pepper. Pour in 1 cup of water or broth, cover, and simmer until the rice is cooked, about 15 minutes. Let the filling cool.

Prepare the Grape Leaves
If using preserved grape leaves, rinse them under cold water to remove excess salt. If using fresh grape leaves, blanch them in boiling water for about 2 minutes until softened. Drain and set aside.

Stuff the Grape Leaves
Lay a grape leaf flat, stem end towards you. Place about 1 tablespoon of the rice filling near the stem. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.

Cook the Stuffed Grape Leaves
Place the stuffed grape leaves seam-side down in a pot. Add the remaining water or broth until they are just covered. Place a plate on top to keep them submerged. Cover and simmer on low heat for about 45 minutes.

Serve
Allow the stuffed grape leaves to cool slightly before serving. They can be served warm or at room temperature, often with additional lemon wedges.
