Cooking Instructions

  1. 1

    Prepare the Ham

Preheat your smoker to 225°F (107°C). Place the ham in a large roasting pan.

  2. 2

    Make the Glaze

In a medium bowl, combine brown sugar, honey, Dijon mustard, black pepper, and apple cider vinegar. Mix until well combined.

  3. 3

    Score the Ham

Using a sharp knife, score the surface of the ham in a diamond pattern. Insert whole cloves into the intersections of the cuts.

  4. 4

    Apply the Glaze

Brush the glaze generously over the ham, making sure to cover all surfaces.

  5. 5

    Smoke the Ham

Place the ham in the smoker and smoke for approximately 3 hours, or until it reaches an internal temperature of 140°F (60°C).

  6. 6

    Rest and Serve

Remove the ham from the smoker and let it rest for at least 20 minutes before slicing. Serve warm.
