Prepare the Grits
In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 cup of grits and reduce the heat to low. Cook for about 20-25 minutes, stirring occasionally, until the grits are creamy. Stir in 1 cup of heavy cream and 2 tablespoons of butter, and season with salt and black pepper to taste.

Cook the Shrimp
In a large skillet, melt the remaining 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and sprinkle with Cajun seasoning, salt, and black pepper. Cook for about 3-4 minutes, or until the shrimp are pink and opaque. Stir in chopped green onions.

Serve
Spoon the creamy grits onto plates and top with the sautéed shrimp mixture. Garnish with additional green onions if desired.
