    Prepare the Shrimp

    In a bowl, combine buttermilk, Cajun seasoning, salt, and black pepper. Add the shrimp and marinate for at least 30 minutes.

    Coat the Shrimp

    In a separate bowl, mix cornmeal and flour. Dip the marinated shrimp into the mixture until fully coated.

    Fry the Shrimp

    Heat oil in a deep skillet over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.

    Prepare the Bread

    Slice the French baguettes lengthwise, leaving them attached on one side.

    Assemble the Po-Boys

    Spread mayonnaise on the inside of the baguettes. Layer with shredded lettuce, fried shrimp, sliced tomatoes, and pickles.

    Serve
