Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

Make the mousse
In a small bowl, dissolve gelatin in 1/4 cup of water. Allow it to sit for 5 minutes. In a separate bowl, beat cream cheese until smooth. Add powdered sugar, peanut butter, vanilla extract, and the dissolved gelatin. Mix until well combined.

Whip the cream
In another bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until fully incorporated.

Assemble the cake
Pour the mousse over the cooled crust in the springform pan. Smooth the top with a spatula. Refrigerate for at least 4 hours or until set.

Serve
Once set, carefully remove the sides of the springform pan. Slice and serve chilled.
