    Prepare the Beef

    Slice the beef against the grain into thin strips, about 1/4 inch thick. Toss the beef strips in cornstarch until evenly coated and set aside.

    Make the Sauce

    In a bowl, combine soy sauce and brown sugar. Stir until the brown sugar is dissolved. Set aside.

    Cook the Beef

    In a large skillet or wok, heat vegetable oil over medium-high heat. Add the beef strips in a single layer and cook for 2-3 minutes until browned, flipping halfway through. Remove the beef from the skillet and set aside.

    Stir-fry

    In the same skillet, add minced garlic and ginger. Stir-fry for about 30 seconds until fragrant. Return the beef to the skillet and pour the soy sauce mixture over it. Stir to coat the beef evenly.

    Finish the Dish

    Add sliced green onions and cook for an additional 1-2 minutes until the sauce thickens slightly. Remove from heat.

    Serve the Mongolian beef over steamed rice or egg fried rice and alongside egg rolls.
