Prepare the Filling
In a large bowl, combine the ground pork, chopped cabbage, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Fill the Gyoza
Take a gyoza wrapper and place a spoonful of the filling in the center. Dip your finger in water and moisten the edges of the wrapper. Fold the wrapper in half and pinch to seal. You can make pleats along the edge for a decorative touch.

Cook the Gyoza
Heat a non-stick skillet over medium heat and add a little oil. Once hot, place the gyoza in the skillet and cook for about 2-3 minutes until the bottoms are golden brown.

Steam the Gyoza
Add about 1 cup of water to the skillet and cover immediately. Let the gyoza steam for about 5-7 minutes until the water has evaporated and the gyoza are fully cooked.

Serve
Remove the lid and allow the gyoza to crisp up for another minute if desired. Serve hot with a dipping sauce made from soy sauce and vinegar.
