    Prepare the Roux

    In a large pot, heat olive oil over medium heat. Add flour and stir continuously until the mixture turns a dark brown color, about 20-30 minutes. Be careful not to burn it.

    Add Vegetables

    Once the roux is ready, add the diced onion, bell pepper, celery, and garlic. Sauté for about 5 minutes until the vegetables are soft.

    Add Sausage and Okra

    Stir in the Andouille sausage and sliced okra. Cook for another 5 minutes.

    Combine Ingredients

    Add the diced tomatoes, chicken broth, bay leaves, Cajun seasoning, salt, black pepper, and thyme. Bring the mixture to a boil, then reduce to a simmer.

    Add Seafood

    After simmering for 30 minutes, add the shrimp and crab meat. Cook until the shrimp are pink and opaque, about 5-7 minutes.

    Serve

    Remove bay leaves, serve the gumbo over cooked rice, and garnish with sliced green onions.
