Fried Catfish Preparation

Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels.

Marinate
Place the catfish fillets in a bowl and pour the buttermilk over them. Let them marinate for at least 30 minutes in the refrigerator.

Prepare the Coating
In a large bowl, combine the cornmeal, flour, salt, black pepper, cayenne pepper, and garlic powder.

Coat the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are fully coated.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully add the coated catfish fillets to the hot oil, frying in batches if necessary. Fry for 5-7 minutes per side or until golden brown and crispy.

Drain and Serve
Remove the fried catfish from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your choice of sides.
