Prepare the Spinach
Wash the fresh spinach thoroughly and remove any tough stems. In a large pot, bring water to a boil and blanch the spinach for about 2 minutes. Drain and immediately transfer to ice water to stop the cooking process. Once cooled, drain again and chop the spinach finely.

Make the Cream Sauce
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Sprinkle in the flour and cook, stirring constantly for another minute to create a roux. Gradually whisk in the milk and heavy cream, continuing to stir until the mixture thickens.

Combine and Season
Add the chopped spinach to the cream sauce. Stir in the grated Parmesan cheese, salt, black pepper, and nutmeg. Cook on low heat for about 5 minutes, allowing the flavors to meld and the cheese to melt into the sauce.

Once creamy and heated through, remove from heat and serve warm as a side dish.
